CHERRY PINEAPPLE BANANA PIE
Just thought I'd let all my xanga buddies know I'll be off line most of the rest of the week. Today my older brother and his lovely bride are coming for a long awaited visit. They plan to be here through the weekend. Of course family gatherings mean we must eat a lot! So I am making one of our family's favorite summertime desserts. I have never met anyone outside of my immediate family who even knows what it is. I really like the way it is tangy and sweet at the same time ~ the same way harvest beets are. My mom got the recipe back in the sixties from one of the best cooks in our little Southern Baptist church, Jenna Mae. The original recipe made two pies and took what seemed like forever for the filling to reduce (sometimes it never really got thick) like it is supposed to. When I found out I was hypoglycemic, I adapted the recipe so I could still eat it, but you could use regular Jell-O if that is not an issue for you. Here is my easy, no-fail sugar-free version that only makes one pie, in case you want to try it:
If you need to know how to make a crust from scratch visit Crisco Pie Central. The trick to a great pie crust is cold ingredients and to always double sift your flour before you measure it. (I use whole wheat or oatmeal flour, so I can eat it.) Please don't cop out and use a graham crust; the texture and overall flavor of the pie is just not the same without a pastry crust.

yummy!! Can I make this without the bananas?
Since bananas are the sweetest fruit in the mixture it would definately alter the taste to leave them out. But if you don't like, or can't eat bananas, I say experiment with another fresh fruit ~ maybe kiwi. The beauty of cooking is being able to adjust things as you go.
Thanks for the pie recipe. It sounds wonderful and I am going to try it. I take a killer banana pudding up to the apt. office now and then and they think it is the greatest they have ever had, so maybe something different would be a nice change for them although they are not complaining about the banana pudding. They love it and I think they would eat it evey week if I took it up there. But, I will try the pie and see how they like it too. I will make it for my hubby and I first. He loves cherry pie.
